What is the Rosso dei Barbi:
As the production of Brunello di Montalcino is strictly limited, some of the vineyards of Sangiovese are not within the D.O.C.G. (Italian version of the Appelation d’Origine Controlée) of Brunello. These vineyards are experimental field for different clones of the same variety and from them, the wine makers produce the Rosso dei Barbi, an agreeable red table wine, which, in its simplicity, retains the same style of all other wines.The alcoholic fermentation in contact with the skins lasts approximately 10 days at a temperature of 28°C.
Brilliant ruby red colour. Fruity bouquet (scent of cherry), lightly spicy and floral. The taste is fresh, lively and lightly tannic. Pleasant persistence.
Very versatile, it complements well white meats, hams and salami, spicy sauces, cheeses. Serve at a temperature of 16-18°C.
