Cusumano Merlot 2017
Zone of production: Presti e Pegni, Alcamo (TP).
Grape: Merlot 100%.
Average age of vines: 12 years.
Vinification: De-stemming, cold maceration on the skins for two days for two days at 5°C, fermentation at 26°-28°C with frequent re-circulation and removal of the must. Malolactic fermentation in stainless steel, and a period in contact with the fine lees of at least five months. Successive fining in the bottle.
Colour: intense red colour
Nose: ripe red fruits, plums, wild berries and spice.
Taste: The palate echoes the nose with a soft rich texture.
Accompanying foods: pasta with meat sauces, baked, roasted and oven-meats, roast beef. Cheese of middle and long seasoning.
